- 1 medium onion, diced

- 1 green bell pepper, diced

Directions
- Heat oil in a large skillet over medium heat. Add onion and peppers, sauté for 4–5 minutes until softened.
- Add garlic, cook for another minute until fragrant.
- Add ground turkey, breaking it apart with a spatula. Cook 6–8 minutes until fully browned.
- Stir in taco seasoning, salsa, and hot sauce. Let simmer 2–3 minutes until flavors blend.
- Spoon mixture into lettuce leaves and top with avocado, cheese, Greek yogurt, or fresh cilantro.
- Serve with lime wedges for a fresh squeeze of flavor!
✨ Nutrition Boost: Each serving packs lean protein and veggies while skipping the heavy carbs of tortillas or buns.
Vegetarian Variation: Spicy Lentil & Veggie Lettuce Wraps
Ingredients (Serves 4)
- 1 cup dry lentils (green or brown), rinsed
- 2 ½ cups vegetable broth
- 1 tablespoon olive oil
- 1 medium onion, diced
- 1 zucchini, diced
- 1 red bell pepper, diced
- 2 cloves garlic, minced
- 2–3 tablespoons taco seasoning
- ½ cup salsa
- 1 tablespoon hot sauce (optional)
- 1 head butter lettuce (or romaine)
- Optional toppings: avocado, shredded cheese or vegan cheese, Greek yogurt or dairy-free yogurt, cilantro, lime wedges
Directions
- In a saucepan, combine lentils and vegetable broth. Bring to a boil, reduce heat, and simmer 20–25 minutes until lentils are tender and most of the liquid is absorbed.
- While lentils cook, heat oil in a skillet. Sauté onion, zucchini, and bell pepper until soft. Add garlic and cook another minute.
- Stir cooked lentils into the skillet with veggies. Add taco seasoning, salsa, and hot sauce. Simmer 2–3 minutes.
- Spoon mixture into lettuce leaves, top as desired, and enjoy!
✨ Nutrition Boost: Lentils add fiber, plant-based protein, and iron — making this just as filling as the turkey version.
