Poke Bowls

    Create your own poke bowl

I absolutely love sushi. I CRAVE sushi!

But, after seeing the documentary “You are what you eat,” I’m a little funny about where we get our fish from, and very funny about ordering food for delivery.

We now only purchase wild caught fish, and I’ve been making sushi at home, which I will say is very fun but very time-consuming.

So what’s the next best thing after sushi? POKE BOWLS!

What is a Poke Bowl you may ask?

Poke bowls are a delicious blend of marinated, typically uncooked seafood, paired with various veggies and drizzled with savory umami or soybean paste-based sauces.

Poke bowls offer endless possibilities for customization. It’s all about making choices that suit your tastes and dietary preferences. The base typically includes rice, but you can switch it to zucchini noodles or a salad if you’re watching your carbs.

As for the protein, you can choose from various options including salmon, tuna, tofu, or even cooked crab. The magic of a poke bowl is in the sauces and toppings. You’ll find a variety of sauces like spicy mayo and eel sauce and toppings like crispy onions, cherry tomatoes, avocados, cashews, and just about anything you want to try!

Here is a photo of a recent poke bowl I made. It included raw salmon and tuna, cooked scallops, roasted broccoli, marinated mushrooms with turkey bacon, asparagus, cherry tomatoes, jalapeños, pickled onions, green onions, and jasmine rice as a base. I drizzled it with Sriracha sauce for an extra kick, and sprinkled some black sesame seeds on top! Yum!

It’s the perfect way to eat fresh and healthy, and add some serious variety to your dining options!
